She’s post-pregnancy body. He’s post-sympathy-pregnancy body. Both are post holiday season. Time. For. Whole30. Take 2. 

After our huge success the first time (many moons ago), we have decided to try it again. First up, breakfast casserole for quick & easy breakfasts (for our new, chaotic way of life).

Breakfast of Champs

You can honestly add any ingredients approved on the Whole30 List (mostly veggies… her favorite… sarcasm… lots of it). But even she eats this casserole because it is so dang good. Here’s what we added:

12 eggs

1 lb sausage

1/2 bag of hash browns

1 bag cauliflower rice

1 pepper & 1 onion, diced

Here We Go

1. Preheat oven to 375* & spray a casserole dish with pam.

2. Whisk eggs together with your choice of seasonings (we used salt & cavenders) & mix in the hash browns & cauliflower rice.

3. Brown the sausage then add in diced onion & pepper until soft. Add in seasonings (we used chipotle powder & cumin powder). Add sausage mixture to egg mixture.

4. Pour into casserole dish. Bake for an hour covered. Feel free to add toppings, such as spinach, tomatoes, hot sauce, etc.
