Stuffed Peppers

This was one of our last Whole30 meals we made, & although we are done with our January Whole30 challenge (& good Lord January is the LONGEST month), we will definitely be making this meal again very soon. 

Reminder… she is NOT a fan of veggies. So like you do with your small children at home, he has to hide the veggies in order for her to eat them. This is the PERFECT meal for that (minus that obvious pepper staring you in the face).

Veggie Packed Ingredients

Bell Peppers (6ish)

1 lb Ground Beef, Turkey, or Chicken

1/2 chopped Onion

1 bag Cauliflower Rice

1 can diced Tomatoes

1 tbsp minced Garlic

1 1/4 tsp Salt, Cumin, Onion Powder, Paprika, & Chipotle Powder

3/4 cup Water

**Could also add in chopped carrots, broccoli, sweet potato, or zucchini.

**Additional Toppings: Cilantro, Black Olives, Avocado Slices, Hot Sauce, & Cheery Tomatoes. (Sour Cream & Cheese if you aren’t going for Whole30 options).

Hiding the Goods

1. Preheat oven to 350*. Cut tops off peppers & remove stem & seeds.

2. Brown choice of meat over medium heat while breaking into small pieces. Cook onion with mixture until soft.

3. Add in salt, spices, garlic, & water. Simmer on low for 15 minutes covered.

4. Remove cover & add in cauliflower rice & tomatoes then cook for 8-10 minutes.

5. Spray 8×8 casserole dish with olive oil spray. Place bell peppers in the dish & add spoonfuls of the filling to each pepper. Bake for 25-30 minutes.

    Beautiful! This is one of my family’s favorite meals. When my kids ask what vegetables are in this, I just say “all the good ones”! LOL

    Stuffed Pepper are so delicious! Do you like the cauliflower rice better than quinoa? I’ve only had the quinoa version, which my husband isn’t too keen on. I’ll have to try this one, thanks!

      We enjoy them both… we love how some cauliflower rice comes with broccoli rice or sweet potato rice so you are getting a variety.

    I have only ever made peppers with the green ones! I always make them in my crockpot also 🙂 one of my favorite meals!
