Coconut Curry Meatballs

Going to be completely honest here. When he suggested making this, she went along with it mumbling “gross” under her breath. & now she can’t WAIT to make it again. 

& this might seem a bit complicated, but we promise it most definitely is not. #notaboutthatlife

Coconut Curry Sauce

1 can coconut milk

3 tablespoons almond butter

1 tablespoon red curry paste

1 teaspoon minced garlic

Mix the above ingredients together over medium heat. That’s it. Simple, tasty, & definitely a sauce we will be making to put on many dishes.

Ballin'

1 lb ground chicken

1/2 cup carrot, diced

1/2 cup onion, diced

1 tablespoon minced ginger

Mix the above ingredients together & form balls. Place on sheet tray (we suggest putting aluminum foil on the sheet tray first for easy clean up… we messed that up fo sho). Once balled, bake in oven for 25 minutes at 375*.

 

Rollin'

Once you take your meat(chick)balls out, place them in the coconut curry sauce. Make sure you get them good & coated. This sauce is seriously stupid good, & you’re going to want every. last. bit.

After that, simply place these lil guys on top of the delish cauliflower rice (see below).

Final Touches

1 bag cauliflower rice

1 teaspoon turmeric 

salt & pepper to taste

Mix above ingredients in a sauce pan on medium heat.

& for those of you who have not eaten cauliflower rice, do yourself a favor, & TRY IT NOW. It tastes so good & the texture is WAY better than regular rice. Everytime we make rice at home, it gets mushy (especially when trying to reheat it). But not cauliflower rice. It’s legit.
