Sweet Potato Hash

Thanksgiving MUST HAVE

We can’t believe we are about to say this, but after eating pumpkin spice gooey butter cake, pumpkin spice gooey butter cookies, pumpkin spice doughnuts, & pumpkin spice ice cream, we are kind of over the pumpkin spice for 2018. 

So we have moved on to this healthy, Whole 30 approved dish. ONLY 4 ingredients, super easy to make, & the perfect side dish to take to Thanksgiving dinner. 

Seriously. This is like Thanksgiving blew up in your mouth. DELICIOUS.

FOUR Ingredients ONLY

That’s right. 4 Ingredients. Well… if you aren’t including the spices that go into this. 

2 sweet potatoes, chopped

2 granny smith apples, chopped

1 white onion, chopped

1 pound of bacon, chopped (preferably that thick cut shtuff)  😉

Spices include 1 tsp salt, 2-3 tbs cinnamon, & 2-3 tbs season salt

Oh, & oil for the saute part of this. Good lord. She might need to start this post over… #notimeforthat

Thanksgiving in yo' mouth

1. Cook bacon however you prefer. We prefer in the oven or skillet so we can get some of the grease. 

2. Toss the sweet potatoes in your spice mixture & 2 tbs of olive oil (oops forgot you need oil here too…). Spread potatoes out on a cookie sheet & throw in the oven for about 20-25 minutes at 400*

3. While that’s in the oven, caramelize your onion in a little bit of the bacon grease or olive oil over medium heat for 20 minutes.

4. When the sweet potatoes are 5 minutes from being done, add apples to your baking sheet & let them finish baking.

5. Mix four main components together into a serving dish & enjoy!
