Oatmeal Cookie Scotchies

We know, we know. It’s oatmeal RAISIN cookies. But guess what. She doesn’t like raisins. So instead, we decided to make oatmeal cookies with butterscotch chips. 

& yes. This might just be our new favorite cookie now. Well, her favorite cookie. They are a little too sweet for him. BUT if you are a fan of butterscotch, you need this in your life… yesterday.

Ingredients

1 egg

1/2 cup butter (1 stick)

1/2 cup brown sugar

1/4 cup sugar

1 tablespoon vanilla extract

1 1/2 cup old-fashioned oats

3/4 cup flour

2 teaspoon cinnamon

1/2 teaspoon baking soda & salt

1 cup butterscotch chips

Steps

1. Mix together egg, butter, sugars, & vanilla extract.

2. Add in oats, flour, cinnamon, baking soda, & salt. Once thoroughly mixed, add in butterscotch chips (try to avoid eating ALL of the dough… it. is. delicious.).

3. Line baking sheets with parchment paper. Scoop out spoonfulls of mixture, roll ’em up, & slightly press them down.

4. Place baking sheets in freezer for 30 minutes (this helps them not spread out too much when baking).

5. Preheat oven to 350*. Place cookie sheets directly in oven from freezer & bake for 9 minutes.

    These sound so yummy! I grew up on oatmeal chocolate chip cookies, but never thought of changing it up and using butterscotch chips. And , I too, want some “yesterday”!
