Pineapple Cake Cookies
Cake cookies are our go-to cookies. So simple, so easy, so delicious. We’ve had all kinds of cake cookies: vanilla, chocolate, red velvet, strawberry… you name it, we’ve either tried it (or really want to). So when he brought home pineapple cake mix, we decided to make pineapple cake cookies with an easy glaze.
4 Ingredient Cookies
1 pineapple cake mix
2 eggs
1/3 cup vegetable oil
1/5 cup white chocolate chips
S.T.E.P.S.
1. Preheat oven to 350. Mix together cake mix, eggs, & veggie oil. Fold in chips.
2. Place small spoonfulls onto sheet trays that are covered with parchment paper.
3. Bake for 14 minutes then let them completely cool before adding the glaze.
4 Ingredient Glaze
6 tbsp butter
3 tbsp heavy cream
2 cups powdered sugar
2 tsp vanilla extract
S.T.E.P.S.
1. Mix all ingredients together.
2. Pour into a sandwich bag (unless you have a fancy glazing gadget) & cut a tiny piece off the corner of the bag.
3. Squeeze away over the cookies. Just a heads up, the glaze hardens pretty quickly.
