Strawberry Funfetti Cake Cookies
If you’ve been following us for a bit, you know about her love for Funfetti. So, naturally, these bad boys caught her eye BIG time whilst walking through Target the other day.
Because not only is she a Funfetti fan, but she also has a massive weak spot for ANYthing strawberry. & there’s tiny candy bits in the cake mix (if you’re into that kind of thing). Honestly, the Funfetti + the strawberry = all. we. need. in. life. (besides tacos. but that’s a different story for another time).

Only. Five. Ingredients. Needed.
Box of Funfetti Cake Mix
2 Eggs
1/3 Cup Vegetable Oil
1/2 Cup White Chocolate Chips, optional
1 Container of Whipped Buttercream Frosting, optional

Oh yeah, & February 27th is National Strawberry Day. The 27th of every month should be. & the 17th. & the 7th…
ANYWAYS… Steps…
1. Preheat oven to 350* & line cookie sheets with parchment paper.
2. Mix cake mix, eggs, & vegetable oil together. Fold in white chocolate chips.
3. Spoon out small amounts onto cookie sheets & bake for 14 minutes (we usually rotate the sheets half way through).
4. Allow cookies to cool then scoop a HEALTHY amount of frosting on the back side of a cookie & press another one on top. This is obviously optional but HIGHLY recommended.
Just sayin.

Oh gosh, this sounds delicious!! I love cake cookies. My son has an egg allergy, so usually, I end up subbing applesauce for the egg. Which honestly….doesn’t always work. lol. But fingers crossed, because I think I need these!
