Sausage Potato Soup
Alright people, we are half way through our Whole30 Challenge! & we are huge fans of soup season, so we are very thankful we could find a soup to satisfy our needs. Sometimes there is just nothing better than enjoying a hot bowl of soup on a cold day.
This would also be a good soup to simply throw in any veggies you happen to have in the fridge. Kind of a spring cleaning/dump-what-you-got kind of soup.
Ingredients
1 lb sausage (mild or hot)
5 yukon gold potatoes, cubed
2 sweet potatoes, cubed
1 onion, diced
10 baby carrots, diced
1 can diced tomatoes
handfull of spinach
6 cups chicken stock
salt & cumin to taste
Soup Steps
1. Brown sausage in stock pot then add onions & carrots. Cook until soft.
2. Add chicken stock along with the potatoes & tomatoes so they cook evenly. Add in seasonings.
3. Bring to a boil then let it simmer for 10-15 minutes. Add spinach while it’s cooling.
4. That’s it. Again, feel free to add in other veggies. We have had many variations of this… without spinach, without tomatoes, with peppers, etc.
It has all the ingredients we love! Sounds delicious.
