Soup Season
1 head Cauliflower (broken into florets)
1 bag frozen Cauliflower Rice
1 medium chopped Onion
2 tablespoons Butter
32 ounces Chicken Stock
3 tablespoons Flour
4 tablespoons Vegetable Oil
2 tablespoons minced Garlic
Steps
(Take One)
1. Take most of the cauliflower florets & half of your chopped onion & toss them in 2 tablespoons of your vegetable oil (we used a garlic herb olive oil). Roast in oven on a sheet tray (cover the bottom with aluminum = easy clean up #ftw) at 350* for 45 minutes.
2. While the roasted veggies cool, begin your roux by melting the butter & the remaining vegetable oil in a soup pot on medium heat. Throw in rest of onion & garlic then cook until translucent. Incorporate tablespoons of flour one at a time until roux gets thick. Pour 28 oz of your chicken stock into pot.

3. In a blender, puree roasted veggies & the remaining chicken stock together (season with salt & pepper). Add to soup pot along with bag of frozen cauliflower rice.
4. Add your own toppings – we added Fried Cauliflower Florets, Sharp Cheddar Cheese, Blistered Tomato Coulis, & French Onion Dip
5. Enjoy! (We even added this soup to a baked potato… options are endless, yo).
Fried Cauliflower
In one bowl, crack one egg & a 1/4 cup of milk whisked together. In another bowl, make seasoning mixture by putting 3 tablespoons of flour, 1 tablespoon of corn starch, 1 tablespoon of Chipotle powder, & 1 tablespoon of Paprika. Take cauliflower florets & toss them in egg mixture then immediately mix into the seasoning mixture (florets need to be coated well). In a small sauce pan, heat a cup of vegetable oil to 300* or medium high. Gently place florets into the oil until golden brown (cook time may vary by floret size).
Blistered Tomato Coulis
Use a blow torch on 20 cherry tomatoes & 1/2 cup chopped onion until you can see a good char (they will pop… it might scare you… don’t be alarmed… #remaincalm). Throw those veggies, 1 tablespoon of hot sauce (we used Gochujang), & 1/2 cup of heavy cream into a blender & puree. This also works as a good soup by itself if you make a larger batch… could possibly pair well with grilled cheese… yep. Grilled cheese sounds good now…

I’ve actually haven’t tried cauliflower soup myself but someone was just telling me about how good it is. Will have to try your recipe!

I love roasted vegetables, especially cauliflower, but you have included some techniques I’ll have to try. Using a blowtorch on the tomatoes will be a first, for sure. But I love the visual pop! Looks yummy.
