Creamy Chipotle Corn

Cook Out Season

2 oz cream cheese

2 oz sour cream

2 teaspoon chipotle

7-8 ears of corn

1/2 teaspoon paprika

1 diced jalapeno

1/2 cup cherry tomatoes

1/2 cup shredded cheese (or more…)

4-6 servings depending on size of corn

 

Last Minute Memorial Day Planners

Haven’t yet figured out what you are taking to your Memorial Day party? No prob. This corn is delish & you might even be referred to as the s*** for bringing along this side to yo party. 

So here we go. Shuck corn & heat her on up. Set oven to 500* on broil (who knew the oven could do something other than bake…). SWEET. So “broil” corn for 30 minutes – 15 minutes on both sides with olive oil & garlic salt. 

Now for our (& by our, she means his) trick number one (& really the only trick for this dish). Place cooked corn in a bunt pan (NEVER knew this pan existed nor that we had it). Then cut the corn just like so (pictured). Boom. Drop mic.

World's. Best. Corn.

Mix cream cheese, sour cream, chipotle, shredded cheese, & paprika together. Take that mixture & add it to the corn.

Chop up the jalapeno & place in with the corn. Do NOT, I repeat, do NOT touch eye balls after cutting the jalapeno. Burning tendencies WILL happen. So wash your hands. Once you are safe, add the chopped jalapeno to the corn. 

Also, cut up tomatoes & add them to the mixture. 

Unless you don’t like tomatoes. Then don’t add them. 

& don’t feel bad about that. She never does.
