Fiesta Corn Dip
One thing you should know about us is we celebrate Cinco de Mayo all month long. Okay, more like all year long. So we are always looking for new Fiesta dishes to make (so if you’ve got em, share em!). Luckily, her boss introduced us to this Fiesta Corn Dip, & we are so thankful! As with any recipe, we slightly tweaked it, but all inspiration goes to the boss!
& this would actually work out great to take with you for a Memorial Day get together. Or a Father’s Day gathering. Or 4th of July party. Okay, you get the point.

Fiesta Corn Dip: Simply combine & mix the following:
8 oz cream cheese (softened)
1 can rotel (drained)
2 cans of corn (drained)
2 tbsp cumin & garlic salt
1 tbsp chili powder
(not pictured: .5 tbsp chipotle powder & 1 pitted & diced jalapeno) – we live that spicier life, yo. & decided to add these after this picture was taken. Our bad.
All great ingredients and simple to make. I love this recipe. I bet it is great with nachos.

This looks and sounds delicious and I can’t wait to make it! What do you use to dip? I assume you use tortilla chips, but I’m curious if there is anything else you’d suggest.
You can use tortilla chips, but our favorite chips to use are the large fritos scoops!
