Soup Season
As soup season comes to an end, we have added a new favorite soup to our list: Italian Sausage Cheese Tortellini Soup. Thanks to Points in My Life, we were able to take this soup, tweak it slightly, & enjoy it all week long, just before Spring hits & we have to wait until Fall to enjoy this again.
Ingredients
1 lb HOT Italian Sausage (or regular)
32 oz. Chicken Broth (1)
14 oz. Petite Diced Tomatoes (2)
10 oz. Tomato Soup (2)
8 oz. Onion & Chive Cream Cheese (2)
20 oz. Cheese Tortellini (1)
1 cup Spinach
1/2 cup Heavy Cream
Soup Steps
1. Brown your sausage in a soup pot, drain. We like our lives a little spicy, but regular/mild sausage works too. Try not to stop there to make sausage gravy for some B’s & G’s. It will be tempting. But stay focused.
2. Add in chicken broth, tomatoes, tomato soup, cream cheese, & heavy cream. Bring to a boil while occasionally stirring, then turn to simmer.
3. While simmering, add in tortellini & spinach. Let simmer for 5-10 minutes. Serve it up!
