Soup Season
Soup season is right around the corner, & we have been more than ready for it! We already know he is amazing when it comes to cooking in the kitchen, but his soup skills?! Shit. Yeah. You’re going to want these recipes.
The only bad thing is usually “our” (okay, okay his) soups are usually on the unhealthier side.
EXCEPT this is a repeat from our Whole 30 Challenge. We enjoyed it so much that we made it again even off of the challenge.
Ingredients
Do NOT feel overwhelmed…
16 oz boneless chicken breasts
1 chopped onion
3 cloves minced garlic
4 cups reduced sodium chicken broth
8 oz can tomato sauce
1/2 tablespoon Chipotle powder
1/4 teaspoon cumin
1/4 cup cilantro
1 (7 oz) zucchini – spiralized
salt & pepper to taste
Here We GO
Alright people, here we go.
First: season the chicken with salt & pepper (after you cut all the ugly gross parts off the chicken & pound it out). Place in crock pot with the onion, garlic, the 4 cups of chicken broth (& before you measure out the 4 cups, just dump the whole thing in… you’re welcome for saving you time & a dirty dish), tomato sauce, seasonings, & cilantro.
Second: cook on high for 3 hours or on low for 4-6 hours then take out chicken and shred it.
Third: replace the chicken in the crock pot along with the spiralized zucchini for another 5 minutes. Serve & top with your choice of cheese, avocado, cherry tomatoes, etc.

This is our first year down south and away from the cooler temps for autumn. I’m still all about making soups, so this is a good one I will need to try. I think the boys will enjoy it.
