Sloppy Joe Sweet Potato

Alright people. We are officially 2/3 of the way through this Whole 30 Journey. We really thought we would have been craving pizza, tacos, & donuts more, but the meals we made this time around were just as good as our last post. The tasty recipes & our weigh ins have been VERY motivational. Stay tuned for our results at the end of our journey.

Balsamic Herb Chicken & Veggies

We have learned to incorporate different types of seasonings & marinades into our meals to make them even better. Even this balsamic addition was quite tasty. It doesn’t matter if we go back for seconds or thirds because we never get that over-stuffed/miserable feeling.

Chipotle Chicken Zucchini Soup

So it is not quite soup season, but everyone needs to add this soup to their fall list of recipes to make. We ate it all week long & never got tired of it. 

In fact, we loved it so much, it’s going to get its own blog post. 

& like always, we must give credit to our recipe influences. Although we have slight modifications to these recipes, our inspiration started at the following link:

Sloppy Joe Sweet Potato

Ingredients:

4 medium sweet potatoes

1 lb ground turkey

1 teaspoon seasoned salt

1/3 cup chopped carrots

1/3 cup chopped onion

1/2 chopped red bell pepper

1 clove garlic, minced

1/2 tablespoon Filipino vinegar (Datu Puti White Vinegar), or red wine vinegar

1/2 tablespoon Worcestershire sauce

1 8 oz. can tomato sauce

2 teaspoons tomato paste

1/3 cup water

1 chopped scallion

 

A lot of ingredients, but trust us, this dish is definitely worth making.

Steps:

1. Poke holes in the taters & bake em for 45 minutes at 425*.

2. Add meat & seasoning salt to medium skillet over high heat. 

3. Add in carrots, onion, bell pepper, & garlic & wait until meat is completely cooked. 

4. Reduce heat to medium before adding in the vinegar & Worcestershire sauce. Let that cook for 4-5 minutes. 

5. Add tomato sauce, tomato paste, & water to skillet. Stir & cover. Reduce heat to simmer & cook for 15-20 minutes (or until your carrots are tender). 

6. To serve, simply cut open your sweet potatoes, sprinkle with a pinch of salt (she forgot this step…), & top each with as much as you’d like! All of these flavors together will blow your mind. We have even thought about making these sloppy joes to put in spaghetti squash.
