Egg Muffins – – Whole 30 Breakfast Items

First meal of the Day

We (& by we, we mean mostly she) are all about preparing as much as possible in advance.  We have tried making egg casserole after egg casserole, & we always seem to be slightly disappointed. FINALLY, we tried using our cupcake pans to make egg muffins as part of our Whole 30 Challenge, & they were a HUGE success. Plus, they are simple to make. 

Ingredients include:

12 bacon slices (prefer thick cut)

8-10 eggs whisked with salt/pepper

Whatever you want to fill in them

Egg Muffins

Steps:

1. Spray cupcake pan with Pam, loop the bacon around the edge.

2. Beat eggs in a bowl with salt & pepper then pour 3/4 way up in cupcake pan.

3. Sprinkle in whatever you want. He added diced ham & diced sundried tomatoes, & she added diced ham & sweet potato rice.

4. Bake for 35 minutes at 350*.

Baking these in the oven with the bacon gives the eggs so much flavor. If you like your bacon SUPER crispy, simply heat these up in the microwave for 30-45 seconds, unwrap the bacon from the egg, then microwave the bacon for another minute.

Turkey Sausage

When we have more time to actually sit down & eat breakfast together, we enjoy our eggs over easy. This is another super easy breakfast. Turkey sausage topped with an egg over easy & whatever toppings you want. He’s become a fan of adding avocado & cherry tomatoes to everything. This breakfast even included a little bit of leftover Chipotle corn on it. Your options are endless.
